When the Incredible Samantha Hadadi (Nourished Naturally) offered to create some healthy recipes with our products, we jumped at the chance! Here’s what she came up with. Warning; you will get cravings looking at this recipe.
Ingredients:
For the cookies –
3 Nom bars
1 tbsp coconut oil, melted
2 tbsp chocolate chips (optional)
For the chocolate cream –
½ cup coconut cream
2 tbsp cacao (or more, to taste)
1 tbsp maple syrup
¼ tsp vanilla paste
Method:
- Place your Nom bars into a blender and blitz until they form a fine crumb. Stir through the melted coconut oil until the mixture starts to stick together (you may need to add a touch more if it remains too dry), then stir through the chocolate chips, if using.
- Roll the ‘dough’ into small cookie shapes, making them larger or smaller according to the amount of servings you want. Place on a lined baking tray and leave to set in the fridge.
- In the meantime, make your cream by beating together the ingredients, adding more or less cacao to taste (I like adding more). Place in the fridge to firm up if it’s a little runny, then spread over half of the cookies. Sandwich with the remaining cookies and enjoy!
