Nom chocolate cookie cream sandwiches

When the Incredible Samantha Hadadi (Nourished Naturally) offered to create some healthy recipes with our products, we jumped at the chance! Here’s what she came up with. Warning; you will get cravings looking at this recipe.

Ingredients:

For the cookies –

3 Nom bars

1 tbsp coconut oil, melted

2 tbsp chocolate chips (optional)

 

For the chocolate cream –

½ cup coconut cream

2 tbsp cacao (or more, to taste)

1 tbsp maple syrup

¼ tsp vanilla paste

Method:

 

  • Place your Nom bars into a blender and blitz until they form a fine crumb. Stir through the melted coconut oil until the mixture starts to stick together (you may need to add a touch more if it remains too dry), then stir through the chocolate chips, if using.
  • Roll the ‘dough’ into small cookie shapes, making them larger or smaller according to the amount of servings you want. Place on a lined baking tray and leave to set in the fridge.
  • In the meantime, make your cream by beating together the ingredients, adding more or less cacao to taste (I like adding more). Place in the fridge to firm up if it’s a little runny, then spread over half of the cookies. Sandwich with the remaining cookies and enjoy!
