Popcorn Pancakes


1/2 cup brown rice flour
1/2 tsp baking powder
1 ripe banana
1 whole egg
Coconut oil for cooking
Almond milk
Pinch of sea salt
Dash of vanilla extract
Nom Salted Maple Popcorn
Peanut butter & fresh fruit to decorate



  • Blend together the banana, rice flour, baking powder, egg, vanilla and salt.
  • Add a splash of almond milk to help everything blend into a smooth pourable batter.
  • Heat a tsp of coconut oil in a frying pan over a medium heat.
  • Pour in a little of the pancake mixture and allow to cook.
  • Once the pancake starts to bubble at the surface, flip and cook on the other side. Repeat this for the remaining mixture.
  • Top with fresh fruit, peanut butter and popcorn.
