Popcorn Poke Bowl

For World Popcorn Day we’ve collaborated with Mr Organic to produce recipes using Nom Simply Salted Popcorn!

Our recipe is a vegan rice bowl, topped with mixed beans, veggies and popcorn. This is a perfect lunch recipe and is customisable to fit the ingredients you’ve already got in your cupboard. We’ve stuck to a traditional poke dressing of sesame oil and soy sauce for ours, but for a Mediterranean twist, you could use olive oil and a squeeze of lemon instead!


Mr Organic Indica Brown Rice

Mr Organic Mixed beans

Mr Organic Sesame Oil

Soy sauce

1 Carrot

1 Spring onion

1 Large tomato

Nom Simply Salted popcorn

Sesame seeds


Cook half a cup of rice to use as the base for the Poke Bowl and add your choice of toppings.

Drizzle with sesame oil and soy sauce, and stir.

Sprinkle with sesame seeds and salted popcorn.
