Popcorn-Stuffed Tomatoes

½ Bag of Nom Tomato Pesto Popcorn
6 Large tomatoes
½ Pack precooked quinoa
1 Onion, chopped
½ tsp Garlic paste
1 tbsp Tomato puree
Salt, pepper and mixed herbs


  • Heat an oil of your choice in a frying pan and add a squeeze (approx. 1 tbsp) of tomato puree;
  • Whilst the oil is heating up, cut the tops off the large tomatoes and scoop out the centres;
  • Once the oil is hot, add the chopped onion and fry gently;
  • Once softened, add precooked grains of your choice (I’m a big fan of quinoa);
  • You can also add the tomato centres so they don’t go to waste;
  • Continue to heat gently, stirring often to prevent the mixture from sticking to the pan;
  • Add a small amount (1/2 tsp) of garlic puree;
  • Chop up ½ bag of Nom Tomato Pesto popcorn, add to the filling mixture and stir;
  • Season to taste with the salt, pepper and mixed herbs;
  • Take filling of the heat and use to stuff the tomatoes prepped earlier!

These can be eaten hot or cold and are a great lunch box filler. Serve with a salad, which you even top off with any left-over filling mixture. And of course, the rest of the popcorn can be used as a snack!
